Abstract
The Gnetum Gnamon tree, also called tulip tree (1) or Jointfir spinach tree (2) (3), is a tree found throught all the island of the Indonesia archipelago, and known under many local names, such as in Java as "melinjo tree". This tree has been decribed at leght by hetne (4).
Especially in Java the young leaves and stems, seeds (fruits) both young and ripe are used in the traditional popular vegetable dish wellknown as "sayur asam". The ripe seeds as such can be consumed as a snack after roasting. Where the trees are abundantly grown, the ripe seeds are collected and processed at the village level on a household food-industy basis into "emping melinjo", a dry thin circular "cake" of about 5 cm in diameter. Sold in the market and shop, "emping melinjo" after deep frying becomes crispy, a delicatesse probably appreciated not only for its crispiness but also for its bitter taste. It is eaten as a snack or as a component of the rice menu.
As the melinjo seed and its product are very commonly consumend by the population at large, more information about its nutritive value may be worthwhile for collecting.
Our nutrition Unit Diponegoro Jakarta, from the National Institute for Medical Research and Development, Ministry of Health, has therefore embarked on a preliminary study on the the nutritive value of the protein of emping melinjo.
During the study it became clear, that an anti-nutritive factor in the seeds must have been present which had presented a problem in the evaluation of the protein quality. The findings leading to this conclusion will be presented in this report.
